Detroit-style pizza originated in the Motor City in 1946, when a man named Gus Guerra, owner of Buddy’s Rendezvous, created a new kind of pizza using a thick, airy dough pressed into blue steel pans, the kind originally used in Detroit’s auto factories to hold spare parts. These pans, with their straight sides and high edges, helped give the pizza its signature shape and texture.
Instead of placing the sauce first, Guerra and his wife Anna Casardo layered Wisconsin brick cheese directly onto the dough, letting it melt to the edges and caramelise against the sides of the pan, forming the iconic crispy crust known as “frico.” The sauce was ladled on top after baking, earning it the nickname “red top.”
Over the decades, Detroit-style pizza remained a local secret until its recent rise to national and now international fame. Thanks to its addictive texture, crispy edge, airy middle, cheesy underlayer, and bright tomato top, this style has gained cult status among pizza lovers.
